Listeria monocytogenes in milk and cheese: studies of prevalence, behaviour and growth modelling during cheesemaking and shelf life

Abstract

Among food-borne pathogens, L. monocytogenes represents one of the most serious food safety concerns. In particular, dairy products are often a source of this infection. During 2007 and 2009 in Italy there was an increase of notifications of listeriosis with the most cases reported in the Centre-North of Italy. This is probably attributable both to a real increase of listeriosis in Italy and to surveillance implementation. However, statistically significant increasing trends in listeriosis notification rates from 2005 to 2009 were noted in Italy as elsewhere in Europe (EFSA/ECDC, 2011). In the present research studies, raw milk, raw milk cheeses and Gorgonzola cheese (frequently contaminated dairy products) were considered like to: a) monitor the prevalence of L. monocytogenes: the collected data may be a useful tool for the quantitative risk assessment study for human listeriosis linked to the consumption of raw milk and cheese made from raw milk or Gorgonzola cheese in Italy; b) study the behaviour of L. monocytogenes in cheeses as a function of the environmental condition, when contaminated at different time points (in milk, during the cheesemaking, during the ripening or the storage) to investigate the effect of physicochemical and microbiological changes on the behaviour of L. monocytogenes during the manufacture process. These informations may increase knowledge concerning the impact of the process on the survival of pathogenic microorganisms. develop useful tools to predict the behaviour of the pathogen as a function of the environmental conditions (tempertaure, pH, aw, lactic acid bacteria competition etc.): these may be considered valuable tools to support the monitoring surveys carried out by officers of the Regional Veterinary Authority, especially when the products (milk or cheeses) are found positive to the presence of L. monocytogenes. In this case, knowing the product storage conditions (storage temperature profile and duration of shelf life) allows to predict the growth of L. monocytogenes, as to assess the safety of the product before it reaches the final consumer.

Tra gli agenti patogeni di origine alimentare, L. monocytogenes rappresenta uno dei più ostici nel campo della sicurezza alimentare. In particolare, i latte ed i prodotti derivati sono spesso fonte del patogeno . Nel corso del 2007 e 2009 in Italia è stato osservato un aumento delle notifiche per listeriosi, con il maggior numero di casi segnalati nel Centro-Nord Italia. Questo è probabilmente riconducibile sia ad un aumento reale di listeriosi in Italia che all’aumento dei piani di sorveglianza. Tuttavia, le tendenze crescenti statisticamente significative nei tassi di notifica di listeriosi dal 2005 al 2009 sono stati rilevati in Italia così come nel resto d'Europa (EFSA / ECDC, 2011). Nel presente studio, latte crudo, formaggi a latte crudo e formaggi erborinati (latticini frequentemente contaminati) sono stati considerati al fine di: a) monitorare la prevalenza di L. monocytogenes: i dati raccolti possono essere uno strumento utile per lo studio di valutazione quantitativa del rischio di listeriosi umana legata al consumo di latte crudo e formaggi a base di latte crudo o formaggio Gorgonzola in Italia; b) studiare il comportamento di L. monocytogenes nei formaggi in funzione delle condizioni ambientali, e alle differenti fasi di contaminazione (nel latte, durante la caseificazione, durante la maturazione o la conservazione) per investigare l'effetto dei cambiamenti fisico-chimici e microbiologici sul comportamento di L. monocytogenes durante il processo di caseificazione. Queste informazioni possono aumentare le conoscenze sull'impatto del processo sulla sopravvivenza di microrganismi patogeni. c) sviluppare strumenti utili per predire il comportamento del patogeno in funzione dei condizioni ambientali (temperatura, pH, aw, batteri lattici etc.). Questi possono essere considerati strumenti preziosi per sostenere le campagne di monitoraggio svolte dell'Autorità Competente, soprattutto quando i prodotti (latte o formaggi) risultano positivi per la presenza di L. monocytogenes. In questo caso, conoscendo le condizioni di conservazione del prodotto (profilo temperatura di conservazione e durata della shelf life) è possibile predire la crescita di L. monocytogenes, e garantire che non superi il limite di 100 ufc/g (Reg. CE 2073/2005) prima di raggiungere il consumatore finale
