dc.description.abstract | Balsamic vinegar of Modena (BVM) is a typical Italian product. The legislation about the production of this particular vinegar is very recent (2007), for this reason it is necessary to improve the information about BVM in order to safeguard the product. In this work, sugars and sugar acetates, obtained from a reaction between sugar and acetic acid, were characterized and determined by HR-NMR and GC/MS techniques, in order to better understand the chemical modifications occurring during maturation and ageing of BVM. For the authentication and the quality evaluation of BVM, the determination of caramel added to the vinegar as colorant has been studied by TLC, UV-Visible, HPLC/UV/ESI/MS and NMR techniques. The determination of the aromatic profile of BVM was also studied by SPME-GC/MS technique, in order to determine the possible addition of flavours, improving, also in this way, the quality control of the product. | en |
dc.description.abstract | L’aceto balsamico di Modena (ABM) è un prodotto tipico italiano. La legislazione che riguarda la produzione di questo particolare aceto è piuttosto recente (2007), per questo motivo è necessario ampliare le informazioni sul prodotto., al fine di salvaguardarlo. In questo lavoro, gli zuccheri e gli zuccheri acetati, ottenuti dalla reazione tra zuccheri e acido acetico, sono stati caratterizzati e determinati tramite tecniche HR-NMR e GC/MS, al fine di comprendere meglio le possibili modificazioni chimiche che avvengono nell’ABM durante la sua maturazione e l’invecchiamento. Per l’autenticazione ed il controllo qualità dell’ABM, è stata studiata la determinazione del caramello, usato come colorante, tramite tecniche TLC, UV-Visibile, HPLC/UV/ESI/MS e HRNMR. E’ stata anche studiata la determinazione del profilo aromatico dell’ABM tramite tecnica SPME-GC/MS, al fine di determinare l’addizione di aromi, migliorando, in questo modo, il controllo qualità del prodotto. | en |
